Touchdown Tater Nachos

Ingredients

  • 3 baking potatoes; sliced peel on
  • peanut oil for deep frying
  • 1 cup sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons Taco seasoning
  • 1/2 cup Bacon bits
  • 1/4 cup diced red onion
  • 1 cup Avocado diced
  • 1/2 cup black olives sliced
  • 1 cup Monterey Jack cheese
  • 1/4 cup Cheddar cheese

Instructions

  • Heat oil to 375 and drop potato slices in; cook for 5 minutes to a crisp golden brown.
  • Drain potato slices on paper towel then arrange on serving platter.
  • In a small bowl combine sour cream, mayo, and taco seasoning. Drop mixture on top of potatoes.
  • Layer remaining ingredients on top of potatoes in order listed ending with cheeses.
