Potatoes Are 100 Percent Gluten Free

Are you one of the 3 million Americans with Celiac Disease (CD)? If so, this should come as welcome news — potatoes are completely gluten-free. And they’re a great low-calorie cholesterol-and-fat-free source of potassium,  fiber and Vitamin C.

For those of you with CD, it can be hard to get around the craving for restricted carbs such as pasta and bread — potatoes are a great way to fix that. So here’s even better news — the United States Potato Board has gathered a collection of 80 gluten-free recipes. Here are some of our favorites:
