Avocado Tamale Pie

Ingredients

  • 2 lbs Lean ground beef
  • 1 cup Tomato sauce 8oz can
  • 1 cup Whole kernel corn drained (8oz can)
  • 1/2 cup Finely chopped onion
  • 1/2 cup Chopped ripe olives
  • 1 cup Bread crumbs fine dry
  • 1 pkg Taco seasoning mix 1.25oz
  • 2-3 cups Seasoned mashed potatoes
  • 2 medium Avocados halved, pitted, peeled and sliced
  • 2 meduim Medium tomatoes chopped

Instructions

  • In large bowl, combine beef, tomato sauce, corn, onion, olives, bread crumbs, and taco seasoning mix.
  • Press evenly into two 2-inch deep pie plates.
  • Bake at 350 degrees for 35-40 minutes. Drain.
  • Pipe mashed potatoes in decorative ring around edge of pie. Broil 3 – 5 minutes or until potatoes begin to brown.
  • Arrange avocado alternately with chopped tomatoes in center of pie.
