Twice Baked Potato Waffles
Ingredients
- 4 baked potatoes
- 3 tbs Butter
- 2 slices crispy Bacon
- 1 egg
- 2 tbs sour cream
- 4 tbs shredded sharp cheese
- 1 minced green onion
- 1 dash hot sauce
- 1 dash salt
- 1/4 tsp Coarse ground pepper
Instructions
- Heat waffle Iron per directions of waffle maker.
- Remove skins on baked potatoes and mash to a chunky mash.
- Add all remaining ingredients combine well.
- Put 3/4 cup of potato mixture onto waffle iron, Bake until golden brown.. Remove serve with a fried egg on top.
Notes
This is a real simply dish and the presentation is beautiful. This great for breakfast and this mixture can be made night before for easy morning prep.
