  • 1 lb 6.5oz bx brownie mix with water vegetable oil and eggs
  • 4 oz cream cheese softened
  • 1/2 cup mashed potatoes room temperature
  • 2 cup powdered sugar
  • 1 tsp pure vanilla
  • 1 cup sweetened shredded coconut
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup salted butter


  • Heat oven to 350 degrees or temperature on package. Prepare a 9x13 inch baking pan with cooking spray or foil.
  • In medium bowl, combine brownie mix with water, vegetable oil and eggs called for in mix until combined. Pour into prepared pan and bake according to package directions. Cool completely.
  • In a medium mixing bowl, combine with mixer cream cheese, mashed potatoes, powdered sugar and vanilla until smooth. Stir in shredded coconut. Spread mixture evenly over brownies.
  • In a small microwavable bowl, combine chocolate chips and butter on high for 30 -60 seconds until melted. Stir to combine. Spread chocolate evenly over potato mixture. Chill for 30 minutes or until set. Cut into 36 bars. Store covered in refrigerator.
