Pecan Toffee Bars

Ingredients

  • 1 cup mashed WI Russet potatoes nothing added
  • 1/2 cup Butter
  • 1 cup brown sugar
  • 1/2 cup All-purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped toasted pecans
  • 3/4 cup milk chocolate or semi-sweet chocolate chips

Instructions

  • 1. Combine potatoes, butter, and brown sugar in heavy medium saucepan. Place over medium heat and bring to boil stirring constantly. Continue to cook and stir for 5 minutes.
  • 2. Remove 2/3 cup of mixture and place in a small bowl. Cool slightly. Stir together flour, soda, and salt. Add to mixture in the bowl. Mix well. Pat to bottom of 8 or 9-inch square baking pan. Bake for about 15 minutes or until crust is golden brown.
  • 3. Add pecans to remaining potato mixture. Spoon over crust. Spread evenly. Bake 10 minutes longer or until mixture begins to bubble. Remove from oven. Sprinkle with chocolate chips. When melted, spread to cover. Cool. Cut into bars.
