Dilled Potato Casserole

Ingredients

  • 1 lb bag of frozen, shredded hash browns thawed
  • 1 small onion diced
  • 1/4 cup chopped dill fresh or freeze-dried
  • 1/4 cup chopped parsley fresh or freeze-dried
  • 1 cup Gouda cheese shredded
  • 1 cup parmesan cheese shredded
  • 1/2 cup sour cream
  • 1 tsp salt
  • 1 tsp pepper
  • chopped green onion for garnish

Instructions

  • Preheat oven to 425°F.
  • Place the thawed hash browns into a large mixing bowl. Add the rest of the ingredients and carefully mix with a large spoon or spatula until everything is well combined.
  • Transfer the potato mixture to a 2-quart casserole dish and bake for 30-35 minutes or until heated through and the top becomes a lightly toasted brown.
