Ingredients
- 2 Hash Brown Patties frozen
- 4 Large Eggs
- 2 tablespoons Whole Milk
- 1 tablespoon Unsalted Butter
- Kosher Salt and Freshly Ground Black Pepper to taste
- 4 slices Cooked Bacon
- 2 slices American Cheese or your preferred choice
- 2 tablespoons Scallions or Fresh Chives thinly sliced
Instructions
- Cook the hash brown patties according to package directions until deeply golden and crisp on both sides.
Preparing the Eggs
- While the hash browns are baking, prepare your eggs. In a medium bowl, whisk together the eggs, milk, a pinch of kosher salt, and a few grinds of black pepper.
- Melt the butter in a nonstick skillet over medium-low heat.
- Add the egg mixture and cook slowly, gently stirring with a silicone spatula until soft, creamy curds form.
- Remove from the heat while the eggs still look slightly glossy, they’ll continue cooking from the residual heat.
Assembling the Toasts
- To assemble, top each crispy hash brown patty with a slice of American cheese and 2 slices of bacon.
- Spoon the warm scrambled eggs over the cheese and sliced scallions or chives.
- Serve immediately while the hash browns are crisp and the eggs are warm.
