Blue Potato Salad

Ingredients

  • 3 lbs Cooked drained & cubed potatoes
  • 1/3 cup Diced scallions
  • 1/3 cup Chicken broth
  • 1/3 cup Bleu cheese – cut in chunks
  • 1/3 cup Chopped fresh parsley
  • 1/3 cup White wine
  • 3/4 cup Bottled French dressing
  • 1/3 cup Bacon bits

Instructions

  • Mix all ingredients together and chill for three hours or longer.
  • Add bacon bits before serving.
