Twice Baked Potato Waffles

Ingredients

  • 4 baked potatoes
  • 3 tbs Butter
  • 2 slices crispy Bacon
  • 1 egg
  • 2 tbs sour cream
  • 4 tbs shredded sharp cheese
  • 1 minced green onion
  • 1 dash hot sauce
  • 1 dash salt
  • 1/4 tsp Coarse ground pepper

Instructions

  • Heat waffle Iron per directions of waffle maker.
  • Remove skins on baked potatoes and mash to a chunky mash.
  • Add all remaining ingredients combine well.
  • Put 3/4 cup of potato mixture onto waffle iron, Bake until golden brown.. Remove serve with a fried egg on top.

Notes

This is a real simply dish and the presentation is beautiful. This great for breakfast and this mixture can be made night before for easy morning prep.
