Golden Potato Onion Gratin

Ingredients

  • 2 tablespoons Butter
  • 1 inch medium sweet onion slliced l/4thick
  • 2 pounds Wisconsin Yukon Gold potatoes sliced 1/4
  • 1 teaspoon Sea salt
  • 1/2 teaspoon ground white pepper
  • 1 cup shredded gruyere cheese
  • 1/4 cup shredded asiago cheese
  • 1 cup heavy whipping cream

Instructions

  • In large skillet, heat butter over medium-high heat. Add onions; cover and cook until onion wilts about 6 minutes.
  • Preheat oven to 375 degrees. Spray a 9-inch square baking dish with no-stick cooking spray.
  • Arrange half of the potatoes in prepared pan and top with half of the onions.
  • Season with half of the salt and pepper. Repeat layers.
  • Sprinkle gruyere and asiago cheeses over top. Gently pour cream over cheeses.
  • Cover with foil and bake for 20 minutes. Remove cover and bake until potatoes are tender and top is golden brown about 40 minutes.
