Potato Skins on the Bar-B-Que

Ingredients

  • 4 potatoes
  • 2 tblsp Butter melted to taste salt and pepper
  • 3-4 Green onions chopped
  • 1 cup grated cheddar cheese
  • 1 tblsp Bacon bits

Instructions

  • Cook potatoes (microwave approx 8 minutes, turning half way) until soft in the center. Cool. Cut each potato in half lengthwise. Scoop out center potato flesh. Brush each with melted butter, season with salt and pepper. Place on heated grill upside for approx 5-8 minutes until browned with grill marks. Flip over and fill with cheese, green onions and bacon bits. Remove when cheese is melted.
