Perfect for a snack, appetizer, or even a light meal before a workout, these pizza cups made with a potato-based crust are a fun twist on the classic pizza slice. Plus, they're baked in a muffin tine, making them easy to prep and take with you

Ingredients

Dough

  • 1 c Instant Potato Flakes
  • 1 c Cold Water
  • 1/2 c Grated Parmesan
  • 1/2 c Potato Starch
  • 1/2 tsp Italian Seasoning

Toppings

  • 3/4 c Marinara Sauce
  • 3/4 c Mozzarella
  • Pepperoni Sausage, Chopped Veggies (optional; this will change the nutritionals)

Instructions

  • Preheat the oven to 400°F.
  • Mix all the dough ingredients together in a mixing bowl until combined; the dough should be slightly tacky but easy to work with.
  • Divide the dough into 12 equal pieces, shape them into small balls, and gently press into disks. Press them into muffin tins that have been lightly sprayed with nonstick spray.
  • Bake the pizza shells for 20 minutes.
  • Remove from the oven and place a tablespoon of sauce in each round and top with a tablespoon of mozzarella and desired toppings. Bake for an additional 5-7 minutes.
  • Serve and enjoy
