Potato Chip Potatoes

Ingredients

  • 6 medium russet potatoes peeled and cut into 1/2-inch cubes
  • 1 1/2 cup potato chips crushed
  • 1/2 onion chopped
  • 2 tbsp butter melted
  • 3/4 tsp salt to taste
  • 1/4 tsp pepper to taste

Instructions

  • Combine all ingredients in a large bowl.
  • Use salad tongs or hands to toss and combine the mixture.
  • Transfer to a shallow, greased 2-quart baking dish and sprinkle top with remaining potato chips.
  • Bake uncovered at 350 degrees for one hour or until potatoes are tender.
  • When fully cooked, the potato chips on top will be getting golden brown and crispy.
  • For added flavor, add shredded cheese on top.
