Potato Candy Easter Nests

Ingredients

  • 12 small chocolate cups
  • 1/2 cup plain mashed potatoes can use instant
  • 4 oz cream cheese softened
  • 1 tsp vanilla extract
  • 1 1/2 cups sweetened shredded coconut divided
  • small jelly bean Easter candies
  • 1-2 drops green food coloring

Instructions

  • Remove the mini chocolate cups from their packaging and place onto a tray. Set aside.
  • In a medium-sized bowl, combine the cream cheese, mashed potatoes, powdered sugar and vanilla.
  • Mix well with a spatula.
  • Add 1 cup of the shredded coconut to the potato mixture and combine well.
  • Spoon this candy mixture into each of the chocolate shells.
  • In a small zip-lock bag, place the 1/2 cup of shredded coconut and the 1-2 crops of green food coloring. Close the bag tightly.
  • Using your fingers, massage the coconut in the bag to distribute the food coloring.
  • Sprinkle a little bit of the green coconut onto each filled chocolate cup, then place 2 or 3 jelly beans on top of that.
  • Store in the refrigerator and serve chilled.
