Mushroom Beef Stew

Ingredients

  • 11⁄2 to 2lbs Beef stew meat cut into 1-inch cubes
  • 2 T All-purpose flour
  • 1/2 Tsp Salt
  • 1-2 Tsp Pepper
  • 1 1/2 C Beef broth
  • 1 Tsp Worcestershire sauce low sodium
  • 1 Clove Garlic minced
  • 1 Bay leaf
  • 1 Tsp Paprika
  • 4 Shiitake mushrooms
  • 2 Medium Carrots sliced
  • 3 Medium Red potatoes diced
  • 1 Small Onion chopped
  • 1 Stalk celery chopped sliced

Instructions

  • Place beef in slow-cooker. Mix together flour, salt and pepper; sprinkle over beef. Stir to coat each piece of beef with flour.
  • Add remaining ingredients and stir to mix well. Cover; cook on low 10 – 12 hours or on high 4 – 6 hours. Stir before serving.
  • *If shiitake mushrooms are unavailable you may substitute other mushrooms of your choice.
