Honey Roasted Easter Red Potatoes
Ingredients
- 2 pounds red potatoes quartered
- 1/4 cup Butter melted
- 3 tablespoon honey
- 3 tablespoon honey Dijon mustard
- 1 small onion diced
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Preheat oven to 375 . Lightly coat two 11x7 inch baking dish with nonstick cooking spray. In a large bowl toss potatoes, onion, melted butter, honey, mustard, salt and pepper until well mixed. Divide mixture equally between prepared pans. Bake in the preheated oven for 35-40 minutes or until tender, stirring halfway through the cooking time.
