Honey Roasted Easter Red Potatoes

Ingredients

  • 2 pounds red potatoes quartered
  • 1/4 cup Butter melted
  • 3 tablespoon honey
  • 3 tablespoon honey Dijon mustard
  • 1 small onion diced
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Preheat oven to 375 . Lightly coat two 11x7 inch baking dish with nonstick cooking spray. In a large bowl toss potatoes, onion, melted butter, honey, mustard, salt and pepper until well mixed. Divide mixture equally between prepared pans. Bake in the preheated oven for 35-40 minutes or until tender, stirring halfway through the cooking time.
