Garlic Potato Noodles

Ingredients

  • 5 medium-sized russet potatoes
  • 1 tbsp olive oil extra virgin
  • 1/2 tsp garlic salt
  • 1 tbsp seasoning mix of your preference rosemary, tarragon, chives and garlic was used in this recipe
  • 2 tbsp parmesan cheese freshly grated
  • salt and pepper to taste

Instructions

  • Preheat oven to 425°.
  • Peel the potatoes and then create the potato noodles by running one potato at a time through a spiralizer.
  • Place the potato noodles in a baking dish and drizzle the olive oil on top.
  • Season with salt, pepper, garlic salt, and seasoning mix and gently toss everything together.
  • Roast for approximately 20 minutes or until the noodles start to turn golden brown.
  • Remove the potato noodles from the oven and set the oven to broil.
  • Sprinkle the potatoes with parmesan cheese and place the baking dish into the oven for four to five minutes or until they are golden brown. Watch them carefully so they don't burn.
