Easy Southwest Baked Potato Bar

Ingredients

  • 1 bag Russet potatoes*
  • 1/2 cup greek yogurt
  • 1 cup chili (try the soup bar at your grocery store)
  • 1 cup pico de gallo
  • 1 cup guacamole
  • 1 cup Cheddar cheese shredded
  • 1/2 cup Mexican style cheese
  • 1/4 cup Bacon bits
  • 2 tbsp Chopped green onions

Instructions

  • Preheat oven to 375 °F.
  • Wash potatoes and pierce a few times with a fork.
  • Bake potatoes for 60-70 mins, or until easily cut with a knife.
  • Set up potato bar with toppings in small bowls.
  • Cut off tops of potatoes, and add any toppings you like!
