Cubed potatoes, roasted extra crispy, provide the perfect crunch to any salad. Use them in place of croutons for an additional vegetable on your plate.

Crispy Roasted Potato Croutons

Ingredients

  • 1 pound Russet Potatoes diced Âľ inch
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Ground Black Pepper

Instructions

  • Preheat the oven to 400°F (204°C)
  • Cut the potatoes into even, Âľ-inch chunks. Add them to a bowl.
  • Drizzle with olive oil and toss. Season the potatoes with the salt and black pepper then toss again to combine.
  • Place the potatoes on a baking sheet lined with aluminum foil.
  • Roast the potatoes for 18-22 minutes or until they are golden and crispy.
  • Allow the potatoes to cool; then top your favorite salad and enjoy!
