Ingredients

medium russet potatoes
peeled and cut into 1/2-inch cubes

potato chips
crushed
1/2
onion
chopped

butter
melted

salt
to taste

pepper
to taste
Instructions
Combine all ingredients in a large bowl.
Use salad tongs or hands to toss and combine the mixture.
Transfer to a shallow, greased 2-quart baking dish and sprinkle top with remaining potato chips.
Bake uncovered at 350 degrees for one hour or until potatoes are tender.
When fully cooked, the potato chips on top will be getting golden brown and crispy.
For added flavor, add shredded cheese on top.
