  • Champion Recipe — Cinco de Mayo Fiesta Potato Waffles. Get out your waffle iron and enjoy this unique potato waffle recipe from Nancy Judd, of Alpine, Utah. Easy to make, these flavorful waffles make a fantastic Cinco de Mayo main course. Avocados, fresh cilantro, salsa and sour cream are the perfect sides. See just how easy this recipe is to prepare.
  • Second Place Recipe — Butter Crisp Mexican Potato Cakes with Avocado Cream. Suzanne Clark, of Phoenix, Arizona, has crafted a potato cake recipe featuring a diverse selection of vegetables. The potato cakes are a combination of sweet potatoes and golden potatoes, chayote squash (or zucchini), corn, jalapeno, and diced red and green peppers with crumbled Queso Fresco (or feta) cheese. Just top with homemade avocado cream and serve with chorizo, eggs and a margarita for a perfect finish.
  • Third Place Recipe — Braised Mole Chicken and Potatoes. This winning recipe was submitted by Kadija Bridgewater of Deerfield Beach, Florida. This delightful stew has a kick to it — and a twist (cocoa powder)! Enjoy Wisconsin Red potatoes and chicken with onion, Serrano peppers and Pasilla peppers — all flavored with a unique combination of spices, including cinnamon, cumin, lemon and chili powder.
