Instructions
  1. Heat oven to 400 degrees F.
  2. In roasting pan, toss potatoes with sage, red pepper flakes, and olive oil. Roast 45 minutes or until tender.
  3. In greased skillet, sauté onions, peppers and celery for five minutes or until tender. Add apples, cook five minutes more. Toss potatoes with veggie mixture.
