Instructions
  1. In a bowl combine olive oil, vinegar and mustard. Set this dressing aside.
  2. Dice the potatoes into large bite size pieces and boil 10 minutes or just until tender.
  3. While potatoes are still warm toss them with the dressing, crumbled bacon, green onions and parsley. Season to taste with salt and pepper.

This dish is best served warm
or at room temperature.
