Potato muffin chili stuffin

2 cupsmashed potatoes
1egg
1/3 cupvegetable oil
1 2/3 cupsflour
1 cupgraded swiss cheese
3 tablespoonsugar
3 teaspoonbaking powder
1 teaspoonsalt
1 cupcanned chili

Steps

  1. Heat oven to 400 degrees. Line 12 medium muffin cups with baking cups.
  2. Stir mashed potatoes, beat in egg and oil.
  3. Stir in remaining ingredients until moist.
  4. Fill muffin cups 1/4 full, and top with a 1-2 tablespoons of chili, and top off with muffin mix. (cup should be about 3/4 full)
  5. Bake until golden brown, about 20 minutes.
